We recommend this recipe to accompany Josh Rouse's latest album, "El Turista."

APPLE PUFF PANCAKE A LA DENISE

 

Preheat oven to 400 degrees. 

2 tblsp. butter 
2-3 granny smith apples, peeled/cored and sliced into 1/2-inch pieces 
2-3 Tbsp. sugar 
1-2 tsp. cinnamon 

Melt butter at medium heat. Add apples to hot pan, add sugar and cinnamon. Saute until soft but still slightly firm, 5-7 minutes. Set aside. 

2 Tbsp. butter 
2-3 eggs
1/2 tsp. salt
 
1 1/2 Tbsp. sugar 
1/2 c. flour
1 c. milk

Melt butter in 10-inch (or 12-inch) cast-iron pan in 400 degree oven. Break eggs into bowl; whisk. Add salt and sugar to eggs; whisk again. Add milk alternately with flour. Pour apple mixture into hot pan, then pour batter over apples and bake 20 minutes at 400. (The secret lies in having a thin batter and having a hot pan to bake it in.) Serve hot with real maple syrup or powdered sugar
