We recommend this recipe to accompany Josh Rouse's latest album, "El Turista." APPLE PUFF PANCAKE A LA DENISE
Preheat oven to 400 degrees. Melt butter in 10-inch (or 12-inch) cast-iron pan in 400 degree oven. Break eggs into bowl; whisk. Add salt and sugar to eggs; whisk again. Add milk alternately with flour. Pour apple mixture into hot pan, then pour batter over apples and bake 20 minutes at 400. (The secret lies in having a thin batter and having a hot pan to bake it in.) Serve hot with real maple syrup or powdered sugar.
