We recommend this recipe to accompany Josh Rouse's latest album, "El Turista." APPLE PUFF PANCAKE A LA DENISE
Preheat oven to 400 degrees. Melt butter in 10-inch (or 12-inch) cast-iron pan in 400 degree oven. Break eggs into bowl; whisk. Add salt and sugar to eggs; whisk again. Add milk alternately with flour. Pour apple mixture into hot pan, then pour batter over apples and bake 20 minutes at 400. (The secret lies in having a thin batter and having a hot pan to bake it in.) Serve hot with real maple syrup or powdered sugar.

- One time we were low on apples and subbed some dried apricots in there. That worked pretty well. Other ideas would be dried cherries or cranberries, maybe some bananas. You get the idea. And if you're going to go out and buy a cast-iron pan, I suggest going to a locally owned specialty retailer. They need the money.
- I think you can use it for pretty much anything you'd use a nonstick pan for. The only trick is you can't wash it with soap because that will ruin the seasoning or whatever. So washing it kind of sucks. Oh, yeah. I made pineapple upside down cake in it, too. There are web sites loaded with cast iron pan recipes. Go for it!
